Chicken Salad Wraps

Ingredients
- 3 limes
- 4 tbsp olive oil
- 1 tsp Paprika powder (sweet)
- 1 tsp ground cumin
- 0.5 tsp chili powder
- 1 tsp Honey
- 500 g chicken breast fillet
- 4 large lettuce leaves (head lettuce)
- 0.5 Red Onion
- 1 Avocado
- 300 g cherry tomatoes
- 1 jar green jalapenos (125 g drained)
- 3 red jalapenos (jar)
- coarse Sea salt

Squeeze juice from one lime, cut the remaining limes into wedges. Whisk 3-4 tbsp oil with paprika powder, cumin, chili powder, honey and 1 tbsp lime juice. Wash, pat dry, slice chicken into strips and mix with the dressing. Cover and refrigerate for at least 1 hour.

Wash, trim and shake lettuce leaves dry. Peel and finely chop the onion. Halve the avocado, remove pit and skin, slice thinly and drizzle with remaining lime juice. Wash tomatoes and quarter them. Drain green and red jalapenos and cut into rings.

Remove chicken from the dressing and set aside. In a pan, brown the meat in the remaining oil until golden on all sides. Add about half a handful of tomatoes and cook briefly. Remove and combine with the leftover dressing.

Arrange the chicken, tomatoes, jalapenos, onion and avocado on lettuce leaves to form wraps and serve. Alternatively, serve each ingredient separately in bowls so guests can assemble their own wrap. Sprinkle coarse salt at the end and provide lime wedges.
