Ingredients
- 1 cucumber
- 1 handful watercress
- 1 bunch arugula
- 1 bunch spring onions
- 2 stalks celery
- 2 tbsp capers
- 200 g smoked fish (e.g., halibut, mackerel)
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 4 tbsp grape seed oil
- Salt
- ground pepper
Instructions

Wash cucumber thoroughly, trim ends and slice lengthwise into thin strips using a peeler or mandoline.

Rinse watercress and arugula, pat dry and shake off excess moisture.

Wash spring onions, trim roots and cut diagonally into rings.

Wash celery, trim ends and slice diagonally into rounds.

Whisk vinegar, lemon juice and oil together; season with salt and pepper.

Place vegetables in a bowl, crumble smoked fish over them. Pour dressing on top and gently toss to combine. Taste and adjust seasoning before serving.
