Shrimps Glass Noodle Salad with Peanuts

Ingredients
- 300 g glass noodles
- Salt
- 2 carrots
- 3 spring onions
- 1 tbsp soy oil
- 2 tbsp unsalted peanut kernels
- 3 tbsp peanut oil
- 2 tbsp Light soy sauce
- Pepper
- 400 g cooked shrimp (peeled and deveined)

Instructions

Cook the glass noodles according to package instructions, drain and rinse with cold water. Peel the carrots and cut into fine julienne strips. Wash, trim, and slice the spring onions into thin rings.

Heat 1 tbsp oil in a pan and sauté the onion rings with the carrot strips for about 2 minutes. Remove and mix into the noodles.

Roast the peanuts in another pan without added fat until golden brown, then remove and let cool slightly.

Whisk the oil with soy sauce and season with pepper. Toss the vinaigrette with the shrimp and peanuts, combine with the glass noodles, arrange in a bowl, garnish with coriander, and serve.
