Cucumber Radish Tomato Salad

This refreshing cucumber-radish-tomato salad from Spoonsparrow is ideal for hot days and a great grilled side dish.

Ingredients

  • 1.5 Salad cucumbers
  • 1 bunch radishes
  • 1 bunch Arugula (80 g)
  • 250 g Cherry Tomatoes
  • 4 tbsp olive oil
  • 3 tbsp Lemon juice
  • 1 tsp Mustard
  • 1 tsp Honey
  • Salt
  • Pepper
  • 40 g pine nuts
  • 0.5 bunch Basil

Instructions

    Clean and wash the cucumber and radishes. Cut the cucumber into cubes and the radishes into thin slices. Wash and dry the arugula. Wash and halve the tomatoes.

    Whisk together the oil, lemon juice, mustard, and honey for the dressing. Season with salt and pepper. Mix the cucumbers, radishes, tomatoes, and arugula with the dressing.

    Toast the pine nuts in a pan without fat for 3 minutes over medium heat. Wash, dry, and pluck the basil leaves. Serve the salad sprinkled with pine nuts and basil.
