Cucumber Basil Cold Soup

The cucumber basil cold soup from Spoonsparrow is a light refreshment for lunch or dinner.

Ingredients

  • 1 cucumber
  • 1 Garlic clove
  • 150 g Yogurt (1.5% fat)
  • 1 bunch Basil
  • 250 ml buttermilk
  • 2 tbsp crème fraîche
  • 0.5 tsp honey
  • 1 splash Tabasco
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper

Instructions

    Peel the cucumber and cut into large cubes. Peel the garlic clove and combine with the cucumber cubes, yogurt, and crème fraîche in a blender; blend until smooth. Wash the basil, dry by shaking, and pluck the leaves. Set aside some leaves for garnish. Mix the remaining basil with buttermilk briefly into the soup and add water as needed to reach desired consistency.

    Season with honey, Tabasco, lemon juice, salt, and pepper.
