  • 2 cucumbers
  • 6 tbsp black olives
  • 300 g green beans
  • olive oil
  • lemon juice (from 1 lemon)
  • Salt
  • freshly ground pepper
  • fresh parsley

    Peel the cucumbers and slice them. Rinse, trim, and blanch the green beans in boiling salted water for about 8 minutes. Drain and let them cool slightly. Halve the olives and remove pits.

    Combine the beans, cucumbers, and olives in a bowl. Toss with 5 tbsp olive oil, lemon juice, salt, and plenty of pepper. This salad pairs well with grilled fish.
