Ingredients

  • 2 Zucchini
  • 2 green bell peppers
  • 2 red bell peppers
  • 4 tomatoes
  • 100 g green beans
  • 1 stalk Celery
  • 400 g smoked salmon
  • 150 g crème fraîche
  • 75 ml heavy cream (at least 30% fat)
  • Salt
  • Pepper (freshly ground)
  • a splash lemon juice

    Wash, trim and dice the zucchini. Wash, halve, seed and dice all bell peppers and tomatoes. Wash, trim and cut the green beans into pieces; blanch for 2 minutes in boiling salted water, drain, shock with cold water and let dry well. Wash, trim and cube the celery. Dice the smoked salmon as well.

    Whisk the crème fraîche with the heavy cream until smooth, season with salt, pepper and lemon juice. Toss all vegetables with the dressing, fold in the salmon, and serve arranged in glasses as desired.
