Ingredients

  • 12 radishes
  • 80 g peeled walnut halves
  • 250 g mixed salad (e.g., arugula, sorrel, nettle, yarrow)
  • 150 g goat fresh cheese roll
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tsp liquid honey
  • Salt
  • pepper (ground)

Instructions

    Wash and trim the radishes, then slice thinly. Roast the walnuts in a hot pan without fat, remove, cool, and roughly chop. Wash, trim, rinse, dry, and tear the salad leaves.

    Slice the goat cheese into thin slices.

    Whisk together vinegar, oil, and honey; season with salt and pepper.

    Combine the salad with radishes, plate on bowls, top with goat cheese, drizzle vinaigrette, and sprinkle nuts before serving.

    Serve apricot chutney on the side if desired.
