Crunchy Pistachio Granola

Spoonsparrow and American Pistachio Growers (APG) present: Crunchy Pistachio Granola – the healthy way to start your day!

Ingredients

  • 2 tbsp peanut butter (crunchy)
  • 110 g coconut oil
  • 40 g maple syrup
  • 250 g rolled oats
  • 130 g roasted salted pistachios (peeled)
  • 80 g pecans
  • 40 g puffed quinoa
  • 100 g pumpkin seeds
  • 50 g sunflower seeds
  • 60 g shredded coconut
  • 45 g goji berries

Instructions

    Add peanut butter, coconut oil and maple syrup to a pot and melt over medium heat while stirring.

    Preheat the oven to 180°C (top/bottom). Put all remaining ingredients except the goji berries and pistachios in a bowl and mix with the peanut butter mixture.

    Spread onto a baking sheet and bake in the middle of the oven for 15–20 minutes, turning 2–3 times.

    Remove from the oven, add the goji berries and pistachios, and let cool completely. Store airtight for about 14 days.
