Carrot Cake Overnight Oats

The Carrot Cake Overnight Oats from Spoonsparrow are wonderfully creamy and give carrot cake vibes!

Ingredients

  • 100 g rolled oats
  • 2 tbsp flax seeds
  • 1 tsp ground cinnamon
  • a pinch freshly grated nutmeg
  • 1 tsp vanilla powder
  • 1 tbsp Raisins
  • 40 g walnut kernels
  • 1 carrot (≈100 g)
  • 1 piece ginger
  • 200 ml milk (1.5% fat)
  • 1 tbsp Maple Syrup
  • 120 g yogurt (1.5% fat)

Instructions

    In a bowl mix rolled oats, flax seeds, cinnamon, a pinch of freshly grated nutmeg, ½ tsp vanilla powder, raisins and 30 g walnuts.

    Peel, wash, and finely grate the carrot; set aside 1 tbsp grated carrot. Peel and finely grate the ginger. Add both to the bowl with the dry ingredients.

    Add milk, maple syrup, and 60 g yogurt, then stir well. Divide into two glasses and let sit overnight or for at least 8 hours to absorb. For the topping, mix remaining yogurt with leftover vanilla, spread over the oats, and garnish with remaining grated carrot and walnuts.
