Crispy Pork Roast with Grapes

Ingredients
- 200 ml verjus
- 125 g sugar
- 40 g salt
- 1.2 kg pork roast (with rind)
- olive oil
- 800 g green seedless grapes
- 0.5 bunch thyme
- 6 peeled garlic cloves
- 50 ml verjus
Instructions

For the marination, whisk all ingredients with 1.5 l water. Wash the meat, pat dry, place in the marinade so it is well coated and cover for 2 days in the refrigerator.

Preheat the oven to 220°C (428°F) fan‑forced or conventional heat.

Remove the meat from the marination, pat dry, season with salt and pepper, place in a greased, oven‑proof dish and roast in the preheated oven for about 30 minutes until crisp. Reduce the heat to 180°C (356°F) and cook the meat for another 45 minutes.

Wash the grapes and arrange them around the meat with thyme and garlic, then bake for an additional 15 minutes.

Take the meat out of the oven, let it rest briefly, crush the grapes with a cooking spoon, pour in the verjus, bring to a boil, season with salt and pepper, slice the meat and serve on a plate with the grapes.
