Ingredients

  • 1 kg boneless pork chop (pork)
  • 1 tsp lemon zest
  • 2 fresh rosemary sprigs
  • 3 Garlic cloves
  • 1 tsp fennel seeds
  • a pinch of clove powder
  • Salt
  • ground pepper (from the mill)
  • lemon wedges

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Finely chop the garlic cloves. Mix them with lemon zest, fennel seeds, clove powder, and the extracted rosemary needles. Add salt and pepper, then rub this mixture onto the pork roast.

    Place the pork roast on a rack in the oven. Slide a fat pan under the rack to catch the drippings while roasting. Cook the meat in the preheated oven for about 2 hours, turning it frequently and basting with the released juices. Serve with lemon wedges and ciabatta.
