Mediterranean Pork Roll Roast

Ingredients
- 1 kg pre‑cooked pork roll roast
- Salt
- black pepper (freshly ground)
- 100 g sun‑dried tomatoes (in oil)
- 100 g mixed pitted olives (green and black)
- olive oil
- 2 tbsp chopped pine nuts
- 2 tbsp freshly grated Parmesan
- 150 ml dry white wine
- 300 ml meat broth

Preheat the oven to 180°C (356°F) with top and bottom heat.

Wash, pat dry, spread out the pork roast, season with salt and pepper. Drain the tomatoes and olives, then chop them. Mix with 2 tbsp tomato oil, 2 tbsp olive oil, pine nuts, and Parmesan, and spread this mixture over the pork. Roll into a roulade and tie securely with kitchen twine.

In a hot roasting pan, sear the roast all around in oil. Deglaze with wine, then add broth and cook in the preheated oven for about 1½–2 hours until tender.

Remove from oven, loosen the twine, slice, and serve on a plate with butter‑sautéed farfalle pasta if desired.
