Crispy Mozzarella Cutlets

Ingredients
- 8 slices sandwich bread
- 1 ball buffalo mozzarella (ca. 250 g, alternatively regular cow mozzarella)
- 4 anchovy fillets
- 2 Eggs
- 250 ml milk
- 50 g flour (for coating)
- Salt
- pepper (ground)
- 250 ml olive oil (for frying)

Trim the crust from the sandwich bread thinly. Lightly toast the loaves. Drain the mozzarella and cut into roughly 1 cm cubes. Drain the anchovy fillets and quarter them.

Beat the eggs in a shallow dish and place the milk and flour each in separate dishes.

Coat the mozzarella cubes in egg, let drain, season with salt and pepper, then toss in flour. Briefly dip the bread slices in milk. Distribute mozzarella cubes and anchovy quarters on half of the bread slices, cover with the remaining slices and press lightly. Flip the filled sandwiches first in the remaining egg, then in flour.

Heat olive oil in a large pan. Place the filled sandwiches in the pan and fry each side over medium heat for about 4 minutes until nicely browned. Drain the sandwiches on paper towels and serve hot, e.g., on a napkin.
