Ingredients
- 1 chicken (prepped)
- 3 shallots
- 1 bunch parsley
- 2 sprigs thyme
- Salt
- Pepper (freshly ground)
- 4 tbsp oil
- 1 tsp paprika powder
- 2 tbsp liquid honey
- 2 tbsp lemon juice

Wash the chicken and pat it dry. Rub salt and pepper inside and out. Preheat the grill or fire pit. Peel the shallots. Wash and shake off excess water from parsley and thyme. Place the herbs and shallots in the cavity of the chicken and secure with toothpicks. Tie the legs and wings with kitchen twine. Mix oil, paprika, lemon juice, and honey; brush the poultry with the mixture and let marinate for 30 minutes. Skewer the chicken and cook over steady heat, turning constantly, for about 45 minutes until cooked through. Remove crispy grilled chicken from the grill and serve hot.
