Crispy Apple Pastries

Ingredients
- 20 frozen dough pieces (for spring rolls)
- 5 tart apples
- 4 tbsp palm sugar
- 4 tbsp Coconut Milk
- 4 tbsp shredded coconut
- 2 limes (juice)
- plant oil (for frying)

Halve, peel, core and dice the apples. Drizzle with lime juice. Toast the shredded coconut without fat until golden yellow. Simmer the palm sugar and coconut milk over low heat until the sugar has fully dissolved. Add the apple cubes and cook briefly (do not let them become mushy). Remove from heat and fold in the toasted coconut.

Let the spring roll wrappers thaw. Lay dough sheets on a work surface and place 2 tbsp of filling in the center of each sheet. Fold one corner over the filling, then bring the sides inwards and roll up the rest.

Heat plant oil in a pot or wok until very hot. Fry the rolls portion-wise for about 3 minutes until golden yellow. Drain on paper towels. Serve with lime wedges warm.
