Crepe with Fried Banana

- 200 g Flour
- 1 tsp block chocolate (chopped)
- 2 Eggs
- 200 ml milk (1.5% fat)
- 100 ml mineral water
- 4 yogurt (low-fat)
- a pinch of salt
- butter for frying
- 150 g dark chocolate (70% cocoa content)
- 2 Bananas

Add the flour and block chocolate to a bowl and whisk with some milk until smooth, then add the eggs, yogurt, salt and the remaining milk with mineral water, stirring until a silky batter forms. Let the batter rest for at least 20 minutes, then stir again. Heat a little butter in a pan, pour a small amount of batter into the hot pan with a ladle, rotate the pan gently to spread the batter thinly across the surface; let it cook on medium heat, flip the crepe, bake the other side and place it on a plate, keeping warm in a preheated oven at 100°C. Repeat with the remaining batter.

Melt couverture chocolate over a double boiler. Peel the bananas and slice them, then fry in 1 tsp butter.

Fold two crepes loosely together on a plate, top with banana slices, spread the melted chocolate over them, and serve immediately.
