Ingredients

  • 200 g Flour
  • 50 g ground almonds
  • 1 pinch salt
  • 75 g sugar
  • 150 g cold butter
  • 1 egg
  • flour (for working)
  • 400 g small seedless grapes (blue and white)
  • 300 g sour cream
  • 300 g cream cheese
  • 150 g sugar
  • 1 Tbsp vanilla sugar
  • 1 untreated orange
  • 3 eggs
  • 50 g cornstarch

Instructions

    Sift flour with almonds onto a work surface, mix in salt and sugar, and create a well in the center. Cut cold butter into small pieces and distribute around the well; add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead into dough by hand. If needed, add a little cold water or flour. Shape into a ball, wrap in cling film, and chill for about 30 minutes. Preheat oven to 180°C fan. Wash grapes and drain.

    Line a tart tin with parchment paper. Roll out the dough on a floured surface and line the tin, lifting a small edge.

    Whisk sour cream, cream cheese, sugar, and vanilla sugar together for the filling. Rinse orange hot, dry, grate zest, squeeze juice, and fold into the cheese mixture. Beat in eggs and cornstarch. Spread the mixture over the shortcrust base, arrange grapes on top, gently press them in. Bake for about 50 minutes. Remove from oven and serve sliced.
