Creamy Tomato Soup

The creamy tomato soup from Spoonsparrow is simply delicious!

Ingredients

  • 1 onion
  • 2 Cloves of garlic
  • 4 tbsp olive oil
  • 650 g ripe tomatoes
  • 2 tbsp Tomato paste
  • 600 ml Vegetable Broth
  • Salt
  • Pepper (freshly ground)
  • 1 tsp Honey
  • 1 tsp Dried oregano
  • 60 ml Heavy cream (30% fat)
  • 2 tbsp Crème fraîche (30% fat)
  • Basil

Instructions

    Peel and finely chop the onion and garlic. Heat 2 tbsp of olive oil in a pot. Add the onion and garlic and sauté for 2–3 minutes over medium heat.

    Meanwhile, wash the tomatoes, roughly chop them, add them to the onion and garlic, and simmer for 10 minutes. Stir in the tomato paste and pour in the broth. Season with salt, pepper, honey, and oregano. Simmer over medium heat for 20 minutes.

    Puree the soup through a sieve. Return the soup to a pot, pour in the cream and bring back to a boil. Wash and dry the basil. Taste the soup, serve in deep bowls and garnish with basil, crème fraîche and olive oil. Serve immediately.
