Sweet and Sour Turkey
Sweet and sour turkey with vegetables from the wok: 1 serving of tender meat plus crunchy vegetables covers the daily requirement for Vitamin A, Vitamin C & Niacin.
Ingredients
- 325 g Turkey breast fillet
- 1 red bell pepper
- 125 g small carrots (2 small carrots)
- 1 red onion
- 25 g ginger (1 piece)
- 1 piece pineapple (or 175 g pineapple pulp)
- 1 tbsp oil
- Salt
- 150 ml orange juice
- 1 tbsp red wine vinegar
- 75 ml ketchup
- 1 tbsp honey
- Pepper
Instructions

Rinse the turkey breast fillet, pat dry and cut into approximately 2 cm cubes.

Quarter, deseed, wash and dice the bell pepper. Peel and julienne the carrots.

Peel and quarter the onion. Peel and julienne the ginger.

Remove the skin and core of the pineapple, then cut the pulp into pieces.

Heat the oil in a wok or large pan. Add the meat, season with salt and stir-fry thoroughly over high heat.

Remove the meat from the pan. Add the onion, carrots and bell pepper to the wok and stir-fry for 3-4 minutes. Add the ginger and briefly sauté.

Add the orange juice, vinegar, ketchup and honey to the wok and cook for about 1 minute.

Add the meat and pineapple and cook everything over medium heat for 5 minutes, seasoning with salt and pepper. Serve with plain rice.
