Salzburger Nockerl

Ingredients

  • 5 eggs
  • 100 g powdered sugar
  • 0.5 vanilla bean (aroma)
  • 20 g flour
  • 10 g cornstarch
  • 1 Tbsp soft butter
  • 1 Tbsp vanilla sugar
  • powdered sugar for dusting

Instructions

    Preheat the oven to 200°C with upper and lower heat.

    Separate the eggs. Whisk the egg whites in a large bowl, gradually adding half of the powdered sugar until glossy and stiff peaks form. Mix the yolks with the remaining powdered sugar and vanilla aroma. Fold in 3 tbsp of the meringue mixture. Add the rest of the meringue, sift flour and cornstarch over it, and gently fold everything together. Grease a baking dish with butter and sprinkle with vanilla sugar.

    Using a dough scraper, cut large domes from the batter and place them side by side in the baking dish.

    Bake on the middle rack for 10–12 minutes until golden brown. Remove from oven, transfer to plates, and dust with powdered sugar before serving.
