Ingredients

  • 75 g brown lentils
  • 2 shallots
  • 1 Garlic clove
  • 150 g starchy cooking potatoes
  • 1 tbsp oil
  • 500 ml vegetable broth
  • 150 g whipping cream
  • Salt
  • white pepper
  • a pinch nutmeg
  • 4 tbsp whipped cream
  • 4 tbsp black caviar

Instructions

    Soak the lentils overnight. Peel and chop the shallots and garlic. Peel and dice the potatoes. Sauté the shallots and potatoes in hot oil, add the lentils, pour in the vegetable broth, bring to a boil and simmer for about 40 minutes until tender.

    Puree the lentils and potatoes, strain through a sieve, stir in the cream, season with salt, pepper, and nutmeg. Garnish with whipped cream and spoon a little caviar on top.
