Beer Soup with Sausage and Cabbage

Ingredients
- 1 Carrot
- 500 g white cabbage
- 3 onions
- 2 tbsp plant oil
- 400 ml meat broth
- 400 ml dark beer
- 1 bay leaf
- 2 peppercorns
- Salt
- ground black pepper
- 4 bratwurst

Peel the carrot and cut into strips or shave. Clean the cabbage, wash if needed, remove the tough core, and shred finely. Peel and finely chop the onions; sauté in a pot with hot oil until translucent. Add the carrot and cabbage strips, cook briefly, then deglaze with broth. Pour in beer, add spices, season with salt and pepper, and simmer over medium heat for about 15 minutes.

Remove the casings from the sausages and slice into 1 cm thick rounds. Add to the soup, bring to a boil, adjust seasoning, and serve hot in pre-warmed bowls.
