Ingredients

  • 125 g anchovies (from the jar)
  • 3 hard-boiled eggs
  • 1 small red onion
  • 3 tbsp finely chopped parsley (or chives as alternative)
  • butter
  • 6 slices rye whole-grain bread (loaf)
  • 1 tbsp caviar (optional)

Instructions

    Rinse anchovies under cold water, pat dry and finely chop. Peel the eggs and finely chop them. Peel the onion and finely chop it. Heat 1 tbsp butter in a pan and sauté the anchovies for 1-2 seconds. Remove the pan from the heat.

    In a bowl mix the anchovies, eggs, onion, parsley and optionally caviar well. Cut the rye bread diagonally, spread with a little butter if desired, top each slice with 1 tbsp of the egg-anchovy salad and serve immediately.
