Vegetarian Potato Soup

The vegetarian potato soup from Spoonsparrow is consistently delicious.

Ingredients

  • 500 g waxy potatoes
  • 200 g celery
  • 2 shallots
  • 1 Garlic clove
  • 2 tbsp butter
  • 800 ml vegetable broth
  • 6 sprigs Thyme
  • 2 tbsp crème fraîche
  • 100 g heavy cream
  • Salt
  • white pepper
  • nutmeg

Instructions

    Peel and dice the potatoes, celery, shallots, and garlic. Sauté everything together for 2–3 minutes in a pot with hot butter, then deglaze with broth. Add two sprigs of thyme and simmer gently for about 25 minutes.

    Blend the mixture finely with an immersion blender, strain through a sieve, and reheat. Add more broth if needed. Stir in crème fraîche and cream.
