Cranberry Muffins

Ingredients
- 400 g flour
- 0.5 cube yeast (21 g)
- 175 ml lukewarm milk
- 50 g sugar
- 1 egg
- 60 g softened butter
- 1 pinch salt
- flour for dusting
- 120 g dried cranberries
- 3 Tbsp liquid butter
- 50 g almond flakes

Add the flour to a bowl and press a well in the center. Crumble the yeast into it. Pour in the lukewarm milk and mix with 1 tbsp sugar and a little flour. Let the pre‑starter rise covered for about 15 minutes. Then add the egg, butter pieces, and salt to the pre‑starter and knead into a smooth dough that releases from the bowl edges. Adjust flour slightly if needed. Cover and let rise for about 30 minutes.

Knead the dough again on a floured surface, incorporating the cranberries, then divide into roughly 12 pieces. Shape each into a ball, roll in butter, and coat with almonds. Place in silicone muffin cups and let rest another 15 minutes.

Preheat the oven to 180°C (350°F) with both fan and top heating. Bake the muffins for about 25 minutes until golden brown. Remove from the oven and cool.
