Goat Cheese Muffins

Ingredients
- 300 g flour
- 0.5 cube Yeast
- 1 pinch sugar
- 125 ml milk (1.5 % fat; lukewarm)
- 3 sprigs herbs (e.g., thyme and rosemary)
- 1 egg
- 3 tbsp olive oil
- 100 g goat cream cheese (20 % fat in total)
- Salt
- Pepper
- chili flakes
- paper muffin cups
Instructions

Sift flour into a bowl. In the center make a well, crumble yeast into it, add 1 pinch of sugar and 4–5 tbsp milk, stir to combine. Cover and let rise for about 20 minutes.

Meanwhile line a muffin tin with paper cups. Wash herbs, shake dry, chop leaves.

Add egg, olive oil, herbs and the remaining milk gradually to the bowl, knead into a smooth dough (it should release easily from the bowl); adjust with more or less milk if needed.

Crumble goat cheese and fold it into the dough. Season with salt and pepper, shape into 6 small balls. Place in cups, sprinkle with chili flakes, let rise again for about 20 minutes. Bake in a preheated oven at 200 °C (fan 180 °C; gas: level 3) for about 25 minutes until golden brown.
