Ingredients
- 100 g red onion
- 300 g cranberries
- 80 g raw sugar
- 1 tbsp Lemon Juice
- 50 ml dry red wine
- 2 tbsp cassis
- 1 pinch sea salt
- 1 pinch cayenne pepper
- 1 jam jar (with twist-off lid)

Peel and finely dice the onions, rinse the cranberries and wash them well. Combine all ingredients in a pot and simmer over medium heat for about 45 minutes until the mixture thickens; taste and adjust seasoning. If needed, add more wine or sugar to taste.

Place the cleaned jars in hot water. Remove just before filling and invert onto a clean kitchen towel to drain. When pouring the chutney, the jars must still be hot. Seal the jars immediately and set them on their lids for about 10 minutes.
