Couscous with Summer Vegetables

Ingredients

  • 300 g Couscous
  • 1 tbsp Tomato Paste
  • 1 small zucchini
  • 0.5 yellow bell pepper
  • 2 Tomatoes
  • 2 tbsp olive oil
  • 1 squeeze Lime juice
  • 0.5 bunch Parsley
  • Salt
  • Pepper
  • paprika powder
  • chili flakes
  • 0.25 bunch Parsley
  • 4 tbsp Yogurt

Instructions

    Place couscous and tomato paste in a bowl. Add 300 ml boiling water, mix well and let stand for 5 minutes.

    Meanwhile, wash the zucchini, bell pepper and tomatoes. Pat the tomatoes dry and remove the core. Cut the vegetables into small cubes and add them to the couscous.

    Add olive oil and lime juice to the couscous. Season with salt, pepper, paprika powder and chili flakes.

    Wash, shake dry and chop the parsley. Add the parsley to the couscous and mix well. Distribute the couscous with summer vegetables on four plates, give it yogurt and serve.
