Salmon Noodles

Spoonsparrow's Salmon Noodles are a classic among pasta lovers!

Ingredients

  • 1 handful Mint (5 g)
  • 2 Spring Onions
  • 1 Organic lemon
  • 200 g Salmon fillet
  • 200 g Band noodles
  • Salt
  • 2 tbsp Rapeseed oil
  • 120 ml milk (3.5% fat)
  • 100 g Sour cream
  • Pepper

Instructions

    Wash mint, shake dry, pick leaves and roughly chop. Clean spring onions, wash and slice into fine rings. Rinse lemon hot, dry, zest and then squeeze. Wash salmon, pat dry and dice into approx. 2 cm cubes.

    Meanwhile, cook the noodles al dente in boiling salted water.

    Heat oil in a pan and sauté the spring onions in it for 2-3 minutes. Then pour over lemon juice and milk. Stir in sour cream. Add salmon cubes and simmer for approx. 6 minutes over medium heat. Then add lemon zest and season the sauce with salt and pepper.

    Drain the noodles and serve with the sauce in bowls. Garnish with mint.
