Quick Turkey Cutlets: Perfect for a light, low-carb dinner. The fresh, spicy salsa makes the cutlets a delight.
Ingredients
- 125 g peaches (1 peach)
- 200 g small cucumber (1 small cucumber)
- 4 sprigs dill
- 2 tbsp white balsamic vinegar
- Salt
- Pepper
- a pinch of chili flakes
- 2 tbsp olive oil
- 320 g turkey cutlets (2 turkey cutlets)
- 1 tbsp Rapeseed Oil
Instructions

Wash peaches, halve, remove pit and dice the flesh finely.

Wash cucumber, rub dry and dice finely.

Wash dill, shake dry and chop roughly.

Whisk vinegar with salt, pepper, chili flakes and olive oil. Mix in peaches, cucumber and dill.

Rinse turkey cutlets, pat dry with kitchen paper and season with salt and pepper.

Heat rapeseed oil in a non-stick pan and fry the cutlets for about 2 minutes on each side. Serve the turkey cutlets with the peach-cucumber salsa.
