Couscous with Green Vegetables

Ingredients

  • 150 g green beans
  • 150 g thick beans
  • 200 g peas
  • 150 g green asparagus
  • 300 ml Vegetable broth
  • 250 g couscous
  • Salt
  • 4 sprigs Mint
  • 2 tbsp sunflower oil
  • 2 tbsp lemon juice
  • Pepper

Instructions

    Wash and trim the beans and peas. Wash the asparagus, peel the lower third and cut off woody ends. Cut the stalks into 4 cm pieces.

    Bring vegetable broth to a boil in a pot. Place couscous in a bowl, pour over the broth, cover and let it soak for 10 minutes.

    Cook the beans and peas in a large pot of boiling salted water for 1 minute. Add the asparagus and cook together for another 7 minutes.

    Meanwhile, fluff the couscous with a fork.

    Drain the vegetables, rinse them under cold water and let them drain.

    Wash the mint, shake dry, pluck the leaves and chop.

    Mix the couscous with beans, peas, asparagus, mint and oil. Season with lemon juice, salt and pepper.
