Couscous Salad with Tomato and Zucchini

Today something light? The couscous salad with tomato and zucchini from Spoonsparrow as a vegan side or main dish. It always comes in good demand!

Ingredients

  • 80 g couscous
  • 150 ml Vegetable broth
  • 1 lemon
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • Salt
  • Pepper
  • 200 g zucchini
  • 1 tomato
  • 2 sprigs Mint

Instructions

    Pour boiling broth over couscous in a bowl. Squeeze the lemon and mix 1 tbsp of juice with 1 tbsp oil, cumin, salt and pepper; let stand for about 5 minutes.

    Peel, wash and finely dice the zucchini and tomato. Toss zucchini with 1 tbsp oil and 1 tbsp lemon juice, seasoning with salt and pepper. Mix tomatoes with remaining oil and season similarly.

    Wash mint, shake dry, pluck leaves and chop some for garnish, then mix into couscous and adjust seasoning.

    First fill half of the couscous in two glasses, then add zucchini and tomato on top, finish with remaining couscous. Garnish with mint.
