Couscous Salad with Mint and Parsley

Ingredients

  • 100 g instant couscous
  • 3 handfuls flat-leaf parsley
  • 1 handful mint
  • 300 g tomatoes
  • 3 spring onions
  • 60 ml olive oil
  • 1 lemon (juice)
  • Salt
  • black pepper (freshly ground)

Instructions

    Soak the couscous in cold water for about 20 minutes. While it soaks, wash and dry the herbs, then finely chop the leaves. Wash the tomatoes, halve them, remove seeds, and dice the flesh. Clean the spring onions, trim them, and slice into small rings.

    Drain the couscous in a sieve. Combine with the chopped herbs, diced tomatoes, sliced spring onions, olive oil, and lemon juice. Season with salt and pepper to taste.
