Bulgur Salad with Salmon

Ingredients
- 500 ml vegetable broth
- 250 g bulgur
- 150 g cherry tomatoes
- 1 Red Onion
- 1 cucumber
- 1 handful parsley
- 1 handful basil
- 3 tbsp Lemon juice
- 5 tbsp olive oil
- Salt
- Pepper
- 1 tsp Dried oregano
- 150 g smoked salmon (sliced)

Heat the broth in a pot, stir in the bulgur, remove from heat and let it soak for about 30 minutes. Wash the tomatoes, quarter them, seed them and cut into pieces. Peel and finely dice the onion. Wash the cucumber, trim the ends, halve lengthwise, deseed and dice small.

Rinse the parsley and basil, shake dry, pluck the leaves and roughly chop. Mix with lemon juice, olive oil, salt, pepper and combine with tomatoes, onion, and cucumber in the bulgur. Let it rest for about 20 minutes and taste before serving.
