Ingredients

  • 1 bundle basil
  • 2 bundles arugula
  • 0.5 bundle mint
  • 100 g Spinach
  • 250 g couscous
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt
  • freshly ground pepper
  • 200 g feta

Instructions

    Wash, rinse, and dry basil, mint, spinach, and arugula. Roughly chop one‑third of the arugula and set aside. Blanch remaining leaves in 400 ml boiling, lightly salted water until they wilt, remove from heat, and blend with the water.

    Mix couscous and 2 tbsp olive oil, cover, and let it absorb for 10 minutes. Season with lemon juice, salt, and pepper, then stir in the remaining olive oil. Dice feta and gently fold into the salad along with the reserved arugula.
