- 2 limes (juice)
- 1 box of watercress
- 300 g yogurt
- 2 tbsp walnut oil
- 6 stalks chicory
- 150 g mung bean sprouts
- Salt
- Pepper (freshly ground)

Cut the watercress leaves from the bed with scissors. Whisk yogurt with lime juice and walnut oil, then fold in the watercress.

Clean and rinse the chicory, removing the middle stalk. Arrange 12 outer chicory leaves on four plates. Finely chop the remaining chicory and mix it with the sprouts into the watercress-yogurt dressing. Season the salad with salt and pepper and fill the chicory leaves with the mixture.
