Ingredients
- 50 g walnut kernels
- 4 heads of chicory (yellow and red)
- 2 pears
- 1 tbsp Lemon Juice
- 150 g blue cheese
- 100 ml cold vegetable broth
- 2 tbsp Apple cider vinegar
- Salt
- ground pepper
- 1 tsp Honey
- 1 tsp sharp mustard
- 4 tbsp rapeseed oil

Roast the walnuts in a hot pan, then remove and let cool. Separate the chicory into individual leaves, cut out the stem, wash and pat dry. Wash the pears, shave into thin slices (or quarter them, remove the core and slice thinly) and mix with lemon juice.

Arrange all prepared salad ingredients on plates and crumble the cheese over them. For the dressing whisk together the broth, vinegar, salt, pepper, honey, mustard and oil, taste, then drizzle over the salad and serve.
