Ingredients

  • 400 g Carrots
  • 400 g leeks
  • 50 g butter
  • Salt
  • 250 g couscous

Instructions

    Peel the carrots and cut them lengthwise into quarters. Clean the leeks, wash them, and slice the pale green and white parts into 0.5 cm thick rings.

    Melt the butter, add the leeks, cover and steam for 4-5 minutes until tender.

    Bring 375 ml salted water to a boil in a pot. Add the couscous, stir once, let it come to a boil again, then turn off the heat. Fold in the leeks and let the couscous stand covered for 10 minutes to absorb liquid.

    Meanwhile, cook the carrots in a little salted water over gentle heat, covered, for 6-8 minutes until tender.

    Fluff the couscous with two forks and shape it into a cone on a plate. Arrange the carrots around it.
