Cottage Pie with Turkey and Sweet Potato Mash

Ingredients

  • 500 g Sweet potatoes
  • Salt
  • 2 carrots
  • 200 g celery sticks
  • 1 red bell pepper
  • 150 g Corn (canned)
  • 1 onion
  • 750 g ground turkey
  • 2 tbsp sunflower oil
  • 2 tbsp Tomato paste
  • 350 ml meat broth
  • pepper (ground)
  • 1 tsp fresh chopped thyme
  • 100 ml hot milk
  • 50 g freshly grated Parmesan
  • nutmeg
  • butter (for greasing)

Instructions

    Preheat the oven to 200°C (400°F).

    Peel, wash and cut sweet potatoes into small pieces; boil in salted water for 20-25 minutes until tender. Wash, peel and dice carrots and celery sticks. Wash, halve, seed and cube bell pepper. Drain corn well. Peel and finely dice onion. Brown ground turkey in hot oil until crumbly. Add vegetables and cook together. Stir in tomato paste, pour in broth, season with salt, pepper and thyme.

    Drain sweet potatoes, let them dry slightly, then mash using a potato masher. Mix in hot milk and Parmesan to create a smooth mash; season with salt, pepper and nutmeg.

    Grease a baking dish. Fill with browned turkey mixture, top with sweet potato mash, and bake for about 45 minutes until golden brown. Remove from oven and serve immediately.
