Corn Soup

Ingredients

  • 2 onions (chopped)
  • 1 clove garlic (chopped)
  • 1 medium potato (peeled and finely diced)
  • 1 tbsp Sunflower oil
  • 1 tbsp butter
  • 600 ml Vegetable Broth
  • Salt
  • pepper (ground)
  • 300 ml milk
  • 400 g corn (canned)
  • 2 tbsp chopped parsley

Instructions

    Melt the butter in a pot, add the oil. Add the onions, garlic, and potatoes. Sauté briefly, then pour in the vegetable broth, bring to a boil again and simmer for 15 minutes. Finally add the milk and corn, cooking for an additional 5 minutes.

    Season with salt and pepper and serve immediately, sprinkled with parsley.
