Corn Polenta with Broccoli and Sausage

- 500 ml vegetable broth
- Salt
- 125 g corn grits (instant)
- 50 g butter
- nutmeg
- 300 g broccoli florets
- 300 g pork minced sausage
- 2 tbsp plant oil
- pepper (ground)
- 75 g freshly grated parmesan

Bring the vegetable broth and a pinch of salt to a boil in a pot. Slowly whisk in the corn grits, stirring constantly until thickened and bubbling. Reduce heat, stir occasionally, and let it thicken further. Remove from heat, fold in butter, season with salt and nutmeg, and keep warm.

Clean the broccoli and blanch in boiling salted water for 2-3 minutes. Drain, shock in cold water, and pat dry.

Press the minced sausage through a fine sieve and brown it in a hot pan with oil until crumbly. Add the broccoli, toss briefly, and season with salt and pepper.

Wash thyme leaves, shake off excess moisture, strip stems, finely chop, and fold into the polenta. Spoon the mixture onto preheated plates, top with the broccoli-sausage mix, and garnish with freshly grated Parmesan before serving.
