Ingredients

  • 150 g corn kernels (frozen)
  • 2 Spring Onions
  • Salt
  • 150 g cornmeal
  • 250 ml milk
  • 2 Eggs
  • plant oil (for frying)
  • 300 g cherry tomatoes
  • 1 Avocado
  • 1 Red Onion
  • 1 tbsp freshly chopped cilantro
  • 1 tsp Lime juice
  • 2 tbsp olive oil
  • Salt
  • black pepper (ground)

Instructions

    Cook the corn in salted water for 1 minute, rinse and drain well. Wash, trim, and slice spring onions into thin rings.

    Whisk cornmeal with milk and a pinch of salt until smooth. Fold in eggs and stir in corn and spring onions.

    Heat a little oil in a hot pan. Drop spoonfuls of the batter into the hot fat and fry each side 2-3 minutes until golden yellow. Drain on paper towels and keep warm in an oven at 80°C if desired.

    For the salsa, wash tomatoes, quarter, seed, and chop small. Peel, halve, pit avocado and dice flesh. Peel and finely chop onion. Mix tomatoes, avocado, cilantro, lime juice, and olive oil; season with salt and pepper.

    Plate the patties, spoon some salsa over them, and serve the rest separately.
