Ingredients
- 1 can corn (drained weight 340 g)
- 200 g cauliflower (blanched and drained)
- 1 tbsp shallot cubes (glazed sautéed)
- 2 tbsp leeks (chopped)
- 2 Eggs
- 2 Tbsp whipping cream
- 2 tbsp flour
- 2 tbsp cornmeal
- 1 tsp salt
- white pepper (ground)

Drain the corn well on a sieve. Roughly chop the cauliflower. Beat the egg with salt, pepper and cream, then stir in the flour and cornmeal. Mix in the vegetables (corn, leeks, shallots and cauliflower) and let rest for about 5-10 minutes.

Heat oil in a pan. Drop spoonfuls of the corn batter into the hot fat and fry until golden yellow on both sides. Serve with a crisp salad.
