Conifer Needle Honey

Ingredients

  • 4 conifer needle tips
  • 2 sprigs thyme
  • 1 kg sugar
  • 1 lemon (juice)

Instructions

    Add the conifer needles (do not wash!) with the thyme to a pot with 750 ml water and simmer covered until the needles look whitish.

    Strain through a cheesecloth, return the liquid to the pot. Stir in the sugar and lemon juice. Cook over occasional stirring until thickened into syrup. Remove from heat and let rest uncovered for 10-15 minutes.

    Transfer the conifer needle honey into hot sterilized jars. Optionally decorate with the cooked needles or seal as desired.
