Colorful Vegetable Soup with Millet

Ingredients

  • 1 small cauliflower
  • 250 g Broccoli
  • 1 kohlrabi
  • 1 onion
  • 200 g Chicken breast fillet
  • Salt
  • Pepper
  • 1 tbsp Olive Oil
  • 1 tsp cumin
  • 1 pinch anise seeds
  • 125 g millet
  • 1 l vegetable broth
  • 2 Tomatoes
  • 2 tbsp fresh chervil leaves

Instructions

    Clean, wash, and cut cauliflower and broccoli into small florets. Peel and dice kohlrabi and onion.

    Rub chicken breast fillets with salt and pepper. Heat oil in a pot. Brown the chicken fillets all around. Remove them from the pot. Add diced onions to the cooking fat and sauté until translucent. Sprinkle cumin and anise seeds. Add millet and pour in vegetable broth. Simmer for about 30 minutes.

    After 20 minutes, add the vegetables and chicken breast to the broth and let everything gently simmer. Wash tomatoes, remove the stem, and dice the flesh into small cubes. Add these at the end of cooking.

    Remove the chicken fillets and slice them. Arrange on a soup plate. Season the soup with salt and pepper, pour it into the plates, and garnish with chervil leaves.
