Colorful Tomato Salad with Halloumi

A colorful tomato salad with halloumi that appeals not only to vegetarians!
Ingredients
- 1 kg mixed tomatoes (red, yellow, orange, green)
- 2 shallots
- 1 Garlic clove
- 2 tbsp olive oil
- 2 tbsp vegetable broth
- 2 tbsp white wine vinegar
- 2 tbsp Lime juice
- 1 tsp Honey
- Salt
- Pepper
- 200 g halloumi
- 10 g basil (0.5 bunch)
- 10 g purple basil (0.5 bunch)
Instructions

Clean and wash the tomatoes. Leave smaller ones whole or halve them; cut larger ones into slices.

Peel and chop the shallots and garlic. Mix both with oil and broth. Whisk in vinegar, lime juice, and honey. Season the dressing with salt and pepper.

Combine the tomatoes with the dressing in a large bowl and let it sit for at least 30 minutes to absorb flavors. Taste again before serving.

While the tomatoes marinate, pat the halloumi dry, cut into four slices, and grill each side for about 3 minutes on a preheated grill.

Wash the basil, pat dry, tear leaves, and place them with the grilled halloumi slices over the tomato salad.
