Lemon bean salad with parsley from Spoonsparrow is a delicious classic from Levant cuisine.

Ingredients

  • 600 g white beans (canned; drained weight)
  • 2 young garlic cloves
  • 0.25 pickled salt lemon
  • 0.5 bunch Parsley (10 g)
  • 0.5 organic lemon (zest and juice)
  • Salt
  • Pepper
  • 5 tbsp olive oil

Instructions

    Rinse the beans and drain them. Peel the garlic and finely chop it. Finely chop the pickled salt lemon as well. Wash the parsley, pat dry, and finely chop.

    Whisk together lemon zest and juice with salt, pepper, and olive oil. Place the beans in a bowl with the garlic, parsley, and pickled salt lemon; toss with the dressing and let it rest for about 30 minutes before serving.
