One-Pot Quinoa

One-Pot-Quinoa from Spoonsparrow is quick to make and perfect for taking away – a healthy choice for your lunch break, for example!

Ingredients

  • 400 g yellow carrots
  • 2 shallots
  • 1 clove of garlic
  • 3 tbsp Rapeseed oil
  • 1 tsp curry powder
  • 125 g quinoa
  • 400 ml Vegetable broth
  • 150 ml coconut milk
  • 200 g kidney beans (canned, drained)
  • 1 red bell pepper
  • Salt
  • Pepper
  • 1 handful coriander (approx. 5 g) to taste

Instructions

    Peel, peel and dice the carrots. Peel and chop the shallots and garlic. Heat the oil in a pot. Sauté the carrots, shallots, garlic and curry powder for 3 minutes over medium heat. Rinse the quinoa in a sieve, add it to the pot, pour in the broth and coconut milk and simmer everything for 10 minutes over low heat.

    Meanwhile, rinse and drain the kidney beans. Halve, deseed, wash and dice the bell pepper. Add the bell pepper cubes with the beans to the stew and simmer for 2 minutes. Season the One-Pot Quinoa with salt and pepper and serve with coriander leaves if desired.
