Ingredients
- 1 kg colorful potatoes such as Laura (red-skinned), Vitelotte (purple) and Sieglinde
- 1 Red Onion
- 1 Spring onion
- 250 g date tomato
- 150 ml Vegetable broth
- 4 tbsp apple cider vinegar
- 2 tbsp mustard
- 1 tsp Paprika powder (sweet)
- Salt
- Pepper
- 4 tbsp olive oil
Instructions

Wash, rinse and steam potatoes in a covered pot for 25–30 minutes.

Peel the red onion and slice thinly. Clean and cut the spring onion into diagonal slivers. Wash the tomatoes, halve them. Whisk together olive oil, vinegar, mustard, paprika, salt and pepper to make the dressing.

Let the potatoes cool slightly, then cut them in half while still warm. Toss with remaining salad ingredients and dressing. Season again with salt and pepper before serving.
